Hearty Granola

I have come across many different granola recipes in cookbooks, magazines, and online but have yet to find one that looks as quick, easy or delicious as the following recipe that I have been making for years. It was given to me by a friend who found it in a newspaper. I have since modified it to my liking.

This granola is delicious sprinkled over yogurt, with a splash of milk as a homemade alternative to cereal or simply as a snack by itself. It also makes a great gift. Just pour some into a mason jar and tie a beautiful ribbon, with the recipe attached, around the lid.

{Hearty Granola}

4 c. old fashioned oats
1 c. sliced almonds
1 c. dried cranberries
1 c. dried sunflower seeds
1 c. shredded coconut
1/2 c. brown sugar
1/3 c. olive oil
1/4 c. honey
2 t. vanilla

Heat oven to 300 degrees. Mix all dry ingredients together. Stir oil and honey together and heat in microwave for 1 minute. Stir vanilla into honey and oil mixture. Pour over dry ingredients. Mix very well, using your hands. Spread onto a cookie sheet that has been lightly coated with cooking spray or lined with parchment paper. Bake 28-30 minutes.
