{recipes} "Spanglish" Egg Sandwich

Have you ever seen the movie Spanglish? I'm not exactly sure why because I usually dislike movies about frustrating love affairs that cannot and should not come to fruition but for some reason, I love this movie and watch it over and over and over.

Luckily, my husband loves it too. His favorite part is when Adam Sandler's character makes a delicious-looking, mouth-watering, unique fried egg sandwich. 

Actually, that may not be his favorite part but every time we watch it he says: "One of these days I'm going to figure out how to make that sandwich." 

Well, "one of these days" was a few weeks ago. One morning, I watched the scene a few times on youtube and recreated the infamous sandwich for my husband. It's been his favorite breakfast ever since.

{Spanglish Egg Sandwich}

1 egg 
1 slice of turkey bacon
1 leaf of romaine lettuce
4 slices of fresh tomato
1/8 c. monterrey jack cheese, shredded 
1 T. mayonnaise 
fresh Italian bread

Fry the bacon in a small pan. Cool on a paper towel and set aside. In the same pan, fry the egg over easy. The yoke should be runny so be sure not to overcook. Slice the bread and  toast it in a toaster oven. Once toasted, spread one slice with mayonnaise. Next, top with lettuce and tomato. Top the other slice with egg, bacon, and cheese. Combine to make a sandwich. If preferred, cut in half before serving.
