Turkey & Vegetable Chili

This is one of my husband's favorite dinners. Actually, I make it so often that I can't believe I haven't posted it up here before! With some warm, homemade cornbread (will post that recipe too) or over rice, you've got the perfect comfort food.

Peas, corn, and kale are my standard vegetables when making this chili but I usually just open my freezer & dump in whatever other frozen veggies I have on hand: swiss chard, spinach, green beans, broccoli, carrots... That way my boys are eating lots of different nutrients without even noticing. ;)

This recipe is easy to double and/or make ahead of time for parties.

I always serve it with a little sour cream and, as mentioned, homemade cornbread.

{Turkey & Vegetable Chili}

1 pound ground turkey
1 29 oz. can diced tomatoes
1 15 oz. can kidney beans, rinsed and drained
1 medium onion, chopped
1 clove garlic, minced
1 green pepper, chopped
1/2 c. frozen peas
1/2 c. frozen corn
3/4 c. frozen, chopped kale
1/2 c. water
1/3 c. steak sauce
3 T. chili powder

Brown meat with pepper, onion, and garlic in a large pot. Add chili powder and stir for one minute. Add tomatoes, with juice, water, and frozen veggies. Bring to boil, cover, and simmer at low for fifteen minutes, stirring occasionally. Add beans and steak sauce. Simmer, uncovered for five minutes.
