The one downside to summer birthdays is that it is so hard to frost the sides of the cake with so much humidity! So here we have the deliciously imperfect Strawberry Lemonade Birthday Cake that my son requested after tasting pink lemonade for the first time a few weeks ago. Luckily pink covers a multitude of melting frosting sins.

In case you're interested, I used this recipe from Two Peas & Their Pod for the lemon cake and it was amazingly moist. (I'm pretty particular about my cake!) For the frosting I just added strawberries to taste in this recipe from Cooking Classy because it is, by far, the best buttercream frosting recipe I had ever found. (I'm really particular about my frosting too! ;)

Oh the anticipation! Apparently a dinosaur tank figurine thing(?) is a really great gift! So glad I finally learned to let my husband pick out their gifts since, you know, he's a boy after all. ;) Side note: those are not the birthday boy's hands in the picture. Birthday boy is behind him... for more on that see {real} below!

Birthday Dinner: Grilled Chicken, Pepperoni, Corn on the Cob & Bacon all topped on a mozzarella pie. As per birthday boy's request.

My two-year-old has a much, let's say, 'stronger' personality than my four-year-old so the age/size gap is kind of minimized when it comes to fighting over toys and the younger one usually ends up winning! (My older sister and I were the same way.) Although as a rule I am pretty insistent on sharing toys regardless of ownership, since he only received a couple of little gifts from my husband and me, for my birthday boy's big night, I made an exception. And I caught the result on camera.

    You are so right about husbands buying presents! I seem to have a knack for picking out kid presents that are way too useful to be fun.

  2. Wow does that cake look yummy! And like the epitome of summer dessert!! Birthdays at that age are SO fun. And I love how that birthday boy thinks - all his faves piled on one pie. Delightful! ;)
    Endless referee time - that's really what motherhood is all about. Lol Just need to wear our whistles and be as fair as possible, as well as help them learn a lesson or 2.
